Frozen Grape Popsicle



I found this Awesome snack idea on a Young Girl's site that I am already addicted to. She is on a journey to get healthy, and she blogs about it and gives tips, recipes, etc. So this is my first recipe or snack i have tried from her site. I am in my first week of getting healthy and eating better. I have filled my fridge with Organic Milks, Almond Milk, fat free cheese, crackers, etc. These are delicious by the way.

All you need is
Grapes, fat free/sugar free instant vanilla pudding mix, and popsicle sticks.
Make pudding as instructed ( i made with organic milk, but you can use 2%) and slide grapes onto stick and dip in pudding, place in dish that will fit in your freezer (on wax paper) and freeze for an hour or until firm. Then Enjoy!! It is my new favorite snack!! :)

Cream Cheese Wonton's



Ok..this recipe was from Food Network. Totally random!!! But they were ok! Not what I expected. But worth a try.

You will need a package of Wonton's
Cream Cheese (2 ounces)
Ginger (fresh or other)
Orange Marmalade
Powdered sugar for sprinkle

Mix cream cheese and marmalade in bowl, then put nice dollop in center of wonton, and take finger (with water) and line the edges of wonton, fold into triangle. Place two at a time in hot oil and fry on each side for about a minute or until golden brown. Take out and sprinkle with sugar....That's it!!!

Halloween Bark...thanks Pinterest!!!!!




I found this awesome Recipe on Pinterest of course....It looked gorgeous so I had to make it. I made a huge batch of this, to hand out to friends and family. And wrapped them in bags with black and orange Tulle. Recipe is as follows:

Halloween Bark!!!

Halloween Oreos
Candy Corn
White Candy (to melt), you can use Almond Bark if you like
Halloween Sprinkles

Line a cookie sheet with wax paper. Then crumble your halloween oreos on bottom, then place candy corn. Melt candy and spread, then immediately cover with sprinkles. Then place in fridge till hardened. Take out and break into pieces and store. Enjoy!!!!

Pinterest Recipe #5......Lemon Cheesecake Bars






These turned out delicious...as I knew they would. My only problem was that my crust wasn't as moist as I think it should have been. Here is the Recipe...

Lemon Cheesecake Bars

1 Box Lemon cake mix
1/3 cup butter (softened)
1 egg
8 oz cream cheese softened
1 cup powdered sugar
1/2 of a lemon, zested
2 TBSP lemon juice, fresh or bottled ( i used both, just added extra lemon, to taste) and I'm glad i did, cause it would not have been enough
2 eggs
1 tsp vanilla

Preheat oven to 350 degrees. In a mixing bowl, blend dry cake mix, butter and 1 egg. Mix well, and press into an ungreased 9x13 pan. Beat the cream cheese until smooth, gradually add in the powdered sugar, stir in lemon zest and juice until smooth. Reserve 1/2 cup of this mixture until end, and keep in fridge. Now beat in remaining eggs and vanilla into the cream cheese mixture until all incorporated. Spread this evenly over crust. Bake at 350 until set, 25-30 minutes. Take out and cool completely. Spread reserved cream cheese mixture over top and refrigerate until firm and cut into squares and serve.

I don't even want to think about the calories!! Enjoy

Pinterest Recipe #4 "Rolled Pizza Bites"













Alright, Here is my 4th Pinterest Recipe!! Rolled Pizza Rolls/Bites....they were delicious. I have not had a pinterest recipe I have not liked yet. We had our great friend/neighbor Dee over tonight for dinner, and it was agreed, everyone loved it. Pinterest is going to make me gain weight....LOL...Here is pics. You will have to forgive the photos, I was lazy tonight and didnt get out my Cannon camera, instead I used my Iphone for photos, so they are not as clear as I would like. Plus my hands were covered in flour, so I didnt handle my phone well.


Recipe for Rolled Pizza Bites

1 Can of prepared Pizza Dough
Pepperoni (sliced)
1 jar of Ragu ( i used Marinara Flavor, but you can certainly use your favorite one)
Dab of butter
Garlic Salt
Italian Season ( i used Spaghetti seasoning)
parmesan cheese (shredded)
Mozzarella cheese (shredded)

Preheat your oven to 425 degrees. Take a piece of wax paper and lightly cover it with flour. Roll out your dough evenly. I melted my butter and added in garlic salt and italian seasoning and mixed it up well, and used my kitchen brush, and i lightly brushed the dough. Then sprinkle on both cheeses and add your pepperoni. Then you will need to tightly roll your dough into a log. Then I cut the roll into thick pieces (this is also where you can cut your own sizes). Then place your pizza bites onto a lightly greased cookie sheet or pizza pan. And bake for 8-12 minutes until dough is done. Then serve with heated sauce.

Pink Lemonade Pie..Pintrest Recipe #3


Alright Guys!!! Thanks to Pintrest..I have found hundreds of new recipes. This is my 3rd go around so far. This pie was extremely good. I made it for a Labor Day cookout and it got ate completely. Here is the recipe:

For the Crust

1 1/2 cups graham cracker crumbs
1/4 cup sugar
4 tablespoons butter

  1. Mix the crumbs, sugar, and butter in a nine inch pie pan or spring form pan. Mix until the crumbs have absorbed the butter and the mixture is uniform.
  2. Press the crumbs across the bottom of the pan and up the sides.
  3. Bake for eight to ten minutes at 350 degrees. (If it’s a hot July day, you can choose not to bake the crust. A baked crust holds together better because the heat melts the sugar to help hold the crumbs together.)

For the Filling

1 8-ounce packet of cream cheese, softened
1 14-ounce can sweetened condensed milk
3/4 cup pink lemonade concentrate (not mixed with water)
2 tablespoons lemon juice (fresh or bottled)
red food coloring as desired

  1. Using the whip attachment and your stand-type mixer or with a handheld electric mixer, mix the cream cheese and sweetened condensed milk together on medium high speed until the mixture is smooth. (If you place the sweetened condensed milk in the bowl first, the cream cheese will not stick to the bowl and you will have little need to scrape the sides.)
  2. Add the lemonade concentrate and lemon juice and continue beating. Color with red food coloring as desired.
  3. Pour the mixture into the pie shell and place it in the freezer while you mix the topping.

For the Topping

1/3 cup shredded coconut
red food coloring
1 cup whipping cream
3 tablespoons sugar
1 teaspoon vanilla extract

  1. Place the coconut in a small bowl with a drop of food coloring and a couple drops of water and stir until the coconut turns pink.
  2. Whip the cream until stiff, adding the sugar and vanilla in the process.
  3. Spoon the cream over the pie filling and garnish with the pink coconut.
  4. Freeze the pie until firm.
Now...as you can see with my pie...i skipped making the homemade crust, i bought a already made graham cracker crust, and I also used Cool Whip instead of homemade whipped cream. I am a single mom so I am all about shortcuts!! Hope you Enjoy.

Pinterest Recipe #2 : Strawberry Cream Pops







Well...I tried my hand at my 2nd Pinterest Recipe...Strawberry Cream Pops, they were absolutely yummy. I just didn't care for the popsicle molds, the pops wouldn't come out of the mold, so i will be using a different method next time. But all in all, a success. they taste great. Here is the Recipe

1 cup slice strawberries
4 ounces cream cheese
1/4 cup vanilla almond milk
7 to 8 packets of Truvia sweetener (to taste)

In a small bowl, mix milk, cream cheese, and sweetener till smooth. Slowly add in the strawberries. Once all ingredients are incorporated, you are ready to pour into molds. This recipe made 4 pops. Then freeze until solid and ENjoy...this recipe was super easy and tastes great. You can also make this recipe with coconut milk, to switch up the flavor a bit.

First Pintrest Recipe



For those of you not familiar with PINTREST......I urge you to go and get addicted....Ha :)!!!
I have been addicted for around 3 months now, but one of my favorite things about it, is the recipe ideas. This is my first recipe to try and they turned out great. They were super easy, and only took 3o minutes to make!! Here is the recipe:

Ingredients:
1 box of yellow cake mix
1/4 cup oil
1/2 cup milk
3/4 cup white choc chips
1 egg
and sprinkles (optional)

Preheat oven to 350 degrees and grease a 9x9 square pan. In a large mixing bowl mix cake mix, egg, and oil very well. Slowly add the milk (as you want the batter to stay dense). Then once all milk is mixed in you can now stir in your choc chips and sprinkles. Bake for 30 minutes or until edges turn golden brown. I sprinkled on more sprinkles right before they were done to set in, they add great color. Enjoy....and do yourself a favor and join Pintrest!!!

Scarf Phase!!!

I had all this yarn that I used on my bookmarks and paper bag albums. I have been wanting to make scarfs for a couple of years now, just never had the courage. So I finally just went for it.
